Join us for our latest Chef's Club lunch at The Boat is a restaurant and micro-farm by chef owner Liam Dillon.
Settled amongst the urban landscape and Staffordshire canalside, Liam has an ethos of seasonal, sustainable living is reflected in its casual fine-dining experiences with an honest approach to modern British cooking. Inspired by the land and local surroundings, The Boat utilises the space to inspire and refine its menus whilst innovating towards protecting the future.
Liam’s career spans some of the country’s top kitchens, starting in London with Marcus Wareing at The Berkeley, Five Fields (1*) in Chelsea and Story (2*) by Tom Sellers in Bermondsey. He was inspired internationally with stints at Quay in Sydney, Noma in Copenhagen, and at Eleven Madison Park (3*) and Gilt (2*) in New York, before returning to his hometown of Lichfield.
